roasted fruitWhether you’re in the Caribbean or the US; right now is probably as cold as it will get all year so why not take advantage of a delicious warm treat?
Roasted fruit makes a great healthy desert but it also makes a delicious breakfast, especially if you top it with a little bit of whole fat Greek yogurt.

Here’s how to make it:

All you need are some of your favorite stone fruits such as apples, pears, plums, or peaches, a drizzle of raw honey, a drop of vanilla extract and a sprinkling of cinnamon.

Pre-heat your oven to 400 degrees and grease a baking dish with some coconut oil. Cut up the fruit and place it in the oven for about 30 minutes. You’ll know the fruit is ready when you can easily poke it with a fork and the crunch has been cooked out of it.

In a separate bowl mix together about 2 teaspoons of raw honey, and 1⁄2 a capful of vanilla extract. Drizzle it onto the fruit, toss gently and then add a sprinkling of cinnamon to the finished product.

If you’re feeling extra decadent you can even make this into a sinful treat by using it as a topper for some vanilla ice cream. Any way you choose to use this recipe I’m sure you’ll love it!
