I have recently developed an obsession for coconut oil, some might say it’s my windex (movie reference: My Big Fat Greek Wedding). So as a lover of chocolate and a lover of coconut oil it was only a matter of time before I figured out how to combine the two. 

And so after rather a lot of googling and some trial and error experimentation I come up with the perfect recipe to create your own coconut oil chocolate! It tastes so good you’ll never want to eat normal chocolate again!

Ingredients

  • 1 cup of extra virgin organic coconut oil
  • ¼-½ cup of maple syrup
  • Pinch of salt
  • 1 cup of cocoa powder

Method

  1. Combine all ingredients in a mixing bowl (start with ¼ of a cup of maple syrup)
  2. Stir until all the cocoa powder is mixed in and you are left with a dark brown liquid.
  3. Taste test. Taste it and if it’s not sweet enough for you, just add in some more maple syrup.
  4. Line a tupperware container with plastic wrap and pour the mixture in.
  5. Put in the fridge to set.
  6. When you’re not eating it, keep it in the fridge.

Note

Coconut oil is liquid at temperatures over 24°C. That means that if it is colder than that in your kitchen the coconut oil will either be solid or not as runny. This recipe is much easier to prepare when the oil is very runny, so you can overcome this problem by melting the oil in a pan, or you can simply leave the jar outside (presuming you’re in a hot climate). However, if it is very cold in your kitchen make sure you combine the ingredients quickly and pour it into your container before it starts to get solid again.

Something else to be aware of is that when eating this delicious home-made coconut oil chocolate – it will literally melt in your mouth, and in your hands and everywhere else. So for that reason keep it in the fridge and when you eat it – eat it quickly! Of course if you live in a cold country or are a fan of very cold air conditioning, melting should not be a concern.

Additions

Just like with all types of chocolate you can add literally anything to your home-made coconut oil chocolate. You just stir in your chosen addition when you combine all the ingredients. Here are a few ideas:

  • Almonds
  • Raisins
  • Ground rock salt (sounds odd, tastes great)

Great recipe! Make sure you use organic ingredients whenever possible and keep in mind that there’s a difference between raw cacao powder which is a nutritional powerhouse and coco powder typically used to make hot chocolate which tends to be packed with sugar, artificial ingredients and preservatives. I would also swap the plastic wrap for parchment paper, but besides that this is a great recipe!
