Congratulations to my future sister-in-law, Jacqueline Silvestri Banks, for her excellent appearance on Fox & Friends! The good news is that for those of you who weren’t able to tune in and watch the “live” show, we’ve found a video of “aftershow”!

With less than 24 hours notice, Jacqueline, her husband Andrew and little girl Annabelle flew to New York, prepared a selection of “cooling summer foods” with the help of Le Cirque New York and appeared on live TV! That’s quiet an achievement!

Jacqueline’s segment was about “cooling summer foods” – which given that it is hot 99% of the time here in the Dominican Republic is pretty good advice for all of us here in Casa de Campo!

A few of Jacqueline’s tips from the show:

• Do not have cold food and drinks! When you consume something cold, your body has to work to bring your body temperature up – and that makes you hotter!

• Drink room-temperature liquids and even ‘cooling’ hot teas such as peppermint.

• Try to eat fish rather than meat. Any kind of seafood will cool you down, whereas meats tend to have a “thermal” affect on the body – that’s why we crave pot roast in the winter!

• Eat raw! The less food has been cooked the better!

• If you can’t or don’t want to eat raw – cook things quickly. The most “cooling” cooking methods are light sautéing, light steaming etc.., while slow roasting, deep frying etc. are not a good idea and will make you feel hotter!

As part of the segment, Jacqueline presented a number of “cooling” dishes prepared with the help of Le Cirque New York (sister restaurant to The Beach Club by Le Cirque at Minitas Beach in Casa de Campo), these dishes included a delicious fruit gazpacho made with peaches, strawberries and melon, as well as an avocado and octopus salad. Yummy!

In a recent blog post “Face your Fear and Kick it Out of the Way” published on her website www.jacquelinebanks.com, Jacqueline talks about the experience – and that fear almost stopped her taking up this great opportunity!

“When the cameras started rolling I thought they were doing the teaser before the commercial break – but it was my segment! I didn’t even have enough time to realize what was going on, I just had to start talking. I’m sure I looked nervous, but once I started talking I didn’t feel as nervous as I thought I would. It felt easy and it was over before I covered all the material I wanted to cover. It was over and I was still alive. I didn’t throw-up, I didn’t forget my name, I may not have been looking at the right place at the right time and I am not a fan of the angle I got filmed from, but I survived.”
