Luca Banfi, originally from Milan, came to Casa de Campo following 11 years working in San Diego and is now the head chef at both the Beach Club by Le Cirque and La Caña Restaurant and Lounge by Il Circo – the Casa de Campo hotel’s best restaurants and my personal favorites! When Luca first arrived in Casa de Campo, he struggled to find fresh and good quality herbs and vegetables to use in his kitchens and so passionate about using only the very best and freshest ingredients Luca set about creating a Casa de Campo vegetable patch and herb garden.
By importing seeds from the United States and with the support, help and encouragement of the Casa de Campo Hotel and Resort, Luca has in less than 2 months created a fantastic herb garden, which boasts several varieties of basil, fennel, chives, mint (perfect for mojitos), chili peppers and the vegetable patch will soon be used to grow fresh arugula.
Luca is so passionate about the Casa de Campo vegetable patch and herb garden he visits it almost everyday himself to collect fresh herbs – which he uses in creating his delicicous dishes served daily at both the Beach Club by Le Cirque and La Caña Restaurant and Lounge by Il Circo.
