Created especially for Casa de Campo villa owners (or Casa de Campo villa guests)as a “take-away” item, this magnificent speciality “Cochinillio relleno de mofongo” (suckling pig stuffed with Mofongo) has been created by Casa de Campo’s food and beverage department, directed by Mr. Phillip Bucher and is just 1 dish in a long list of special culinary creations, designed especially for the holiday season in Casa de Campo.
The mouth-watering dish consists of a roasted 12 pound piglet (perfect for 8 people), which has been stuffed with Dominican speciality dish “Mofongo.” “Mofongo” is fried, mashed plantains with pieces of pork crackling inside – it is normally served alone and is absolutely delicious (a personal favorite of mine) – I can only imagine how delicious it must be stuffed inside a crispy juicy suckling pig!
