Massaged Kale Salad

Kale_BundleKale is one of the best greens around. Full of vitamins, antioxidants and even calcium it is usually my go-to.

There are so many delicious ways to prepare kale, from oven-roasted chips, to braised or as a salad mix in. Raw, massaged kale however is one of my favorite ways to enjoy it – just make sure you keep raw kale to no more than once a week if you have thyroid trouble!

Ingredients:

1 bunch kale
1 avocado
1/4 red onion finely chopped
1⁄2 cup cherry tomatoes
Juice of 1⁄2 lemon
1 clove garlic finely chopped
A handful of crushed almonds

Instructions:

1. Remove the kale from the stems and tear into bite sized pieces.
2. Pour the lemon juice over the kale and massage it into the kale until it’s nice and tender.
3. Cut the cherry tomatoes in half, the avocados into cubes and finely cut the onion
and garlic.
4. Toss everything together and then top with the crushed almonds.
5. Enjoy!
