La charla fue dirigida por la chef Coral Ayoroa originaria de La Paz y un elemento clave en el \u00e9xito que la Fundaci\u00f3n Gustu y Melting Pot de Bolivia ha logrado. Coral comenz\u00f3 como Sous Chef en Gustu \/ Melting Pot, y ahora est\u00e1 a cargo de la educaci\u00f3n en la fundaci\u00f3n Melting Pot.<\/p>\n<p>La visi\u00f3n de este innovador restaurante va m\u00e1s all\u00e1 de posicionarse en la alta cocina gourmet, pero tambi\u00e9n comparte una gran responsabilidad social para brindar educaci\u00f3n gastron\u00f3mica a j\u00f3venes bolivianos de escasos recursos. Claus Meyer, cofundador del restaurante dan\u00e9s Noma en Copenhague, fund\u00f3 la Fundaci\u00f3n Melting Pot en 2010 y tres a\u00f1os m\u00e1s tarde abri\u00f3 Gustu con la intenci\u00f3n de iniciar un nuevo movimiento gastron\u00f3mico boliviano. Ahora el restaurante se ha convertido en una compa\u00f1\u00eda independiente con una escuela dentro de sus instalaciones, muchos de sus estudiantes son chefs, cantineros, sommeliers y meseros. Melting Pot Bolivia es una fundaci\u00f3n sin fines de lucro que promueve el desarrollo econ\u00f3mico, social y sostenible de los sectores gastron\u00f3mico y agr\u00edcola de Bolivia. El men\u00fa era de hecho algo diferente de lo que estamos acostumbrados a comer en la Rep\u00fablica Dominicana, pero al mismo tiempo sabroso. La mayor\u00eda de los platos tenian amaranto, a menudo llamado \u00abgrano de los dioses\u00bb, es un s\u00faper alimento que se ha cultivado durante al menos 8000 a\u00f1os y se dice que es una de las mejores fuentes de prote\u00edna vegetal en el mundo junto con la quinua. El primero fue una zanahoria org\u00e1nica cubierta de ajo asado y amaranto seguido de cola de res con \u00abca\u00f1ahua\u00bb rosa, un grano que junto con el amaranto y la quinua constituyeron el tr\u00edo de oro de la comida de los Incas debido a su incre\u00edble valor nutritivo. Esa noche tambi\u00e9n nos sirvieron uno de sus platos m\u00e1s populares, el caviar de amaranto con a\u00e7a\u00ed, leche de almendras amaz\u00f3nicas y trigo malteado, que si le preguntas a cualquiera que fue a la cena de degustaci\u00f3n, \u00a1estamos seguros de que estar\u00edan de acuerdo con nosotros en que podr\u00edan desayunar esto cada ma\u00f1ana! Para finalizar la noche, el postre fue Kari Kari, con chocolate e hibisco, un plato que mezcl\u00f3 el sabor caracter\u00edstico del chocolate con el sabor agridulce de las frambuesas y el crujido de los granos tostados.<\/p>\n<p>\u00a1Esta edici\u00f3n de Flavors of the World fue de hecho una que recordaremos por un tiempo!
