Afirmando que la sal es \u201calgo crucial\u201d para \u00e9l en la cocina, y la incorpora en una variedad de la misma. Como uno de los chefs m\u00e1s reconocidos del Per\u00fa, entren\u00f3 en Le Cordon Bleu antes de trabajar en restaurantes en toda Europa, entre ellos Guido en Italia y El Celler de Can Roca en Espa\u00f1a. Tambi\u00e9n fue el primer cocinero peruano invitado a participar en el Festival de Fusi\u00f3n de Madrid en 2004.
