The restaurant has now been closed and although the building (and the old sign) still remains the cafe is unused all year.&nbsp;\u2013 except for at halloween time, when it is used to host the annual <a href=\"https:\/\/casadecampoliving.com\/2009\/11\/halloween-casa-del-rio-the-full-story-and-photos\/\" target=\"_self\" rel=\"noopener\">Halloween party!<\/a> (Correction: The Halloween party was in fact held in the Cafe del Rio \u2013 next door to the old Cafe del Sol \u2013 opps!)<\/p>\n\n\n\n<!--more-->\n\n\n\n<p><strong><span style=\"text-decoration: underline;\">Pizza al Sole e Ombreggiato: Caf\u00e9 del Sol, a Leafy Retreat from the Day<\/span><\/strong><\/p>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"alignleft is-resized\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/casadecampoliving.com\/wp-content\/uploads\/2022\/10\/cafe-del-sol-logo-300x191-2.jpg?resize=300%2C191&amp;ssl=1\" alt=\"cafe del sol logo\" class=\"wp-image-13132\" title=\"cafe del sol logo\" height=\"191\" width=\"300\"\/><\/figure>\n<\/div>\n\n\n<p>Caf\u00e9 del Sol was the only place in Altos de Chavon in the early 1990s which was open for lunch.  Caf\u00e9 del Sol became a refreshing interlude in the day for visitors to Altos.<\/p>\n\n\n\n<p>Caf\u00e9 del Sol was open for dinner too, with strings of lights on the latticework arbor overhead making it look like a European-style outdoor beer garden.<\/p>\n\n\n\n<p>The building was covered in climbing vines with beautiful yellow trumpet flowers.  Underneath the arbor it was dark and cool, just the ticket on a steaming hot day.  Surrounded by vines and flowers, you could imagine that you were in a shadowy woodland.<\/p>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter is-resized\"><a href=\"https:\/\/casadecampoliving.com\/2010\/03\/memories-of-casa-de-campo-cafe-del-sol-a-leafy-retreat-from-the-day\/grandparents-day-pizza-anticipation\/\" rel=\"attachment wp-att-13131\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/casadecampoliving.com\/wp-content\/uploads\/2022\/10\/grandparents-day-pizza-anticipation.jpg?resize=575%2C693&amp;ssl=1\" alt=\"grandparents day - pizza anticipation\" class=\"wp-image-13131\" title=\"grandparents day - pizza anticipation\" height=\"693\" width=\"575\"\/><\/a><\/figure>\n<\/div>\n\n\n<p>My favorite time of day to go to Caf\u00e9 del Sol was on a clear hot afternoon.  From the Caf\u00e9 terrace one could look out over the Chavon River, above the ancient rain forest, to the mysterious mountains on the horizon, while chilling out with a Presidente ceniza and contemplating the artistic menus.<\/p>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter is-resized\"><a href=\"https:\/\/casadecampoliving.com\/2010\/03\/memories-of-casa-de-campo-cafe-del-sol-a-leafy-retreat-from-the-day\/cafe-del-sol-over-the-river\/\" rel=\"attachment wp-att-13126\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/casadecampoliving.com\/wp-content\/uploads\/2022\/10\/Cafe-del-Sol-over-the-river.jpg?resize=575%2C428&amp;ssl=1\" alt=\"Cafe del Sol - over the river\" class=\"wp-image-13126\" title=\"Cafe del Sol - over the river\" height=\"428\" width=\"575\"\/><\/a><\/figure>\n<\/div>\n\n\n<p>There were two menus.  The antipasti and pizzas menu was in the shape of a pizza with a close-up photo of a pizza on the cover, and it featured 19 delicious pizzas, and appetizers consisting of several salads, sandwiches, and a soup.  The dessert menu listed 18 fabulous ice cream desserts and was graced with a watercolor painting by one of the Altos School of Design students.<\/p>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter is-resized\"><a href=\"https:\/\/casadecampoliving.com\/2010\/03\/memories-of-casa-de-campo-cafe-del-sol-a-leafy-retreat-from-the-day\/pizza-menu-cover\/\" rel=\"attachment wp-att-13127\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/casadecampoliving.com\/wp-content\/uploads\/2022\/10\/pizza-menu-cover.jpg?resize=575%2C493&amp;ssl=1\" alt=\"pizza menu cover\" class=\"wp-image-13127\" title=\"pizza menu cover\" height=\"493\" width=\"575\"\/><\/a><\/figure>\n<\/div>\n\n\n<p>One day we were invited to a pizza workshop where the chef showed us how to make our own pizzas from scratch.  He displayed the ingredients on his worktable for us to admire, then made an impressive pizza and baked it in the new brick pizza oven.<\/p>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter is-resized\"><a href=\"https:\/\/casadecampoliving.com\/2010\/03\/memories-of-casa-de-campo-cafe-del-sol-a-leafy-retreat-from-the-day\/cafe-del-sol-pizza-dough-1\/\" rel=\"attachment wp-att-13128\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/casadecampoliving.com\/wp-content\/uploads\/2022\/10\/Cafe-del-Sol-pizza-dough-1.jpg?resize=575%2C482&amp;ssl=1\" alt=\"Cafe del Sol - pizza dough 1\" class=\"wp-image-13128\" title=\"Cafe del Sol - pizza dough 1\" height=\"482\" width=\"575\"\/><\/a><\/figure>\n<\/div>\n\n\n<p>The new pizza oven had been designed by a chef who came to Altos de Chavon from the Hotel Cipriani in Venice, Italy.
