Bar Monaco has opened its doors! We were finally able to catch a glimpse of how this ambitious project is coming along. Last Friday December 2nd, Altos de Chavón and the Casa de Campo community welcomed the Formula One themed champagne bar, Bar Monaco!
Bar Monaco’s soft opening was blessed with a clear sky after a slight drizzle during the day. As the wooden walls that had been covering the project site came down just a few hours before the event, guests were able to see the beautiful and elegant outdoor terrace with it’s dark wood chairs and tables, and their shimmering glass chandeliers. The redesign of the establishment is clearly keeping with what Roberto Coppa had envisioned for Altos de Chavón all those years ago, highlighting the wooden accents that are so characteristic of Chavón’s design.
Even though the final touches are still being integrated and the second floor is not ready, we were able to go upstairs to see the progress. From what we have been able to see so far, everything will be spectacular and ready for the grand opening at the end of the month where they will be having an amazing New Years Eve Party! (If you are still thinking about where to go for New Years…look no longer, Bar Monaco is putting together one heck of an evening.)
The soft opening also supported the Fundación MIR as a percentage of the proceeds benefited the organization so that they can continue with their labour of love.
The kitchen…oh the kitchen! You have to go check this kitchen out. Not only is it visible to guests, but it is also well equipped with everything needed to prepare the molecular menu of international dishes, designed to take us on a tour around the 21 Grand Prix destinations.
That night Chef Carlos Chapellin, had special helpers prepare the tasting menu for the soft opening – the students of the Fundación MIR vocational school! They received guidance and hands on experience that we are sure will help them as they kick off their career in the kitchen.

We loved what we have been able to see so far of Bar Monaco and can’t wait for them to complete their renovations and take us back to Monaco in the 1950’s with style, fashion and the need for speed at the center of it all!
